Assalamwalaikum/ hello everyone. Tried rasmalais but kept flopping on you? This had happened to me too several times. But once I tweaked the measurements, I had the perfect recipe.
Ingredients
1 cup or 8 tbsps milk powder
1 tsp all purpose flour
1/2 tsp baking powder
1egg
1 tbsp ghee
11 liter+1/4 cup milk
Sugar as desired
A few drops of colour
Vanilla essence
In a thick bottomed pan, bring 1 liter milk to a boil. Add sugar as per as your taste. Add a few drops of color you desire or leave it plain along with some vanilla essence. Once the milk comes to a boil, turn the flame to low. Combine the first five ingredients in a bowl and form a smooth dough. Roll out medium sized balls (you need to work quick or else they will dry out). Turn the flame for the milk to medium low and start adding the rasmalai balls gently to the milk. After 5 mins, gently turn them to the other side. Cook till done completely. The whole cooking process takes 10 to 12 minutes. If there is very less milk remaining, boil 1/4 cup milk and gently add to the rasmalai. Enjoy!
