Assalamwalaikum /hello everyone. Hope you are all doing well. Many a time we all prefer something that is tasty and comes together in minutes. While this recipe doesn't come together in minutes ( sorry if you thought so😂), this will definitely satisfy your taste buds.
Ingredients
1 carrot, cut into strips
1 to 2 potatoes, cut into strips
1/2 cup cauliflower, cut into florets
1/2 cup broccoli, cut into florets
1 capsicum, cut into strips
1/4 cup peas
11/2 tsp cumin seeds
1/4 tsp asafoetida or hing
1 to 2 medium onions, chopped finely
3 to 5 green chillies, slit
1 tsp ginger garlic paste
1/2 cup tomato puree
1/4 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp garam masala
Wash and prep all the vegetables as mentioned. In a non stick pan, add 3 to 4 tbsp oil and fry the carrots. After 5 to 7 minutes, add the potatoes. Once they are 90% done, transfer to a plate. Add the cauliflower and broccoli florets and fry till they are 90% done. Fry the capsicum strips along with them. In a kadai, add 2 to 4 tbsps oil and first add cumin seeds. Once they brown, add the asafoetida and stir till they release their aroma. Add the chopped onions and the chillies and cook till the onions begin to brown. Add the ginger garlic paste and cook till the raw smell disappears. Add the tomato puree and cook till oil is released and a thick masala is formed. Season with turmeric, red chilli powder, garam masala and salt. Saute for a min and add the fried vegetables. Give a stir till the vegetables are coated in the masala. If the vegetables are raw, add little water and cook till the vegetables are done. Once done, garnish with coriander and serve hot. Serve with rice or rotis. Enjoy!
